CURING A HYBRID GRILLS STAINLESS STEEL GRILL

A new stainless steel grill or smoker should be cured like a new iron skillet.   Rub the stainless steel cooking surface and the inside of the pit with peanut oil or bacon grease.    Get a medium fire going between 200 and  240 degrees. Open the bottom vents about 1/3 of the way and close the smokestack control about 1/2 of the way.  Let your pit go to town smoking for at least 4 hours.  A Pit will cure without oils, but the buildup of the resin base seems to hold up  better in the long haul if you do use oil.  With a Hybrid Grills stainless steel grill. we are talking about many barbecues over the very long haul.  Start your grill off right and she will never disappoint you.

Be careful with green woods, as some will produce very bitter tastes.  Do not ever use green mesquite in a Hybrid Grills stainless steel grill, smoker or barbecue pit
.   Some people do use green mesquite while grilling steaks or burgers but, I'd advise against it.  You sure don't want to get the pitch of green mesquite or any other wood coating the inside of your grill smoker.  True barbecue aficionados will be able to pick out the bitter flavor.  More on wood in the BBQ Wood page.
