BARBECUE TIPS FOR YOUR HYBRID GRILLS BBQ PIT

 
 

 

HERE ARE SOME TIPS ON USING YOUR HYBRID GRILL!   


No matter what you are going to cook or the specific method you intend to cook your barbeque with (gas grill, charcoal grill or smoke) on your Hybrid Grill, there are a couple of basic things you need to do before you put your BBQ on. 

#1 - Be sure the stainless steel cooking surface (the part that touches the barbeque) of your Hybrid Grill is extremely clean of cooked on build up or anything else.

#2 -  Get your grill's stainless steel cooking surface pretty darn hot.

#3 - Just before putting the BBQ on the grill, rub the the stainless steel cooking surface with some cooking oil or grease.  I typically place a wadded up a couple of paper towels in a coffee cup and pour about a quarter of a cup of peanut oil into it saturating the paper towel .  I then use some tongs to rub the grill with the saturated paper towel immediately before you put the meat on.  Your barbeque won't stick to grill if you follow these directions.

 

FOR GAS GRILLING

You can pretty much just go to town.  This method is the least hassle and  is good for steaks, hamburgers, sausages, chicken pieces, pork chops, fish, shrimp, lobster and etc.  Its quick and easy and really nice after work during the week or when you just don't want to take the time to barbecue.   Crank up your gas grill, follow the steps above and your are grilling within 5 - 10 minutes.

 

FOR CHARCOAL GRILLING

 
Open the vents in the bottom of your Hybrid Grill.  Place charcoal briquettes on an area equal to the space the food will occupy, with an additional 2 inches on all sides.  If you are going to grill for a while (like at a large picnic or event), go into the easy access rear door of your 100% stainless steel Hybrid Grill and adjust the charcoal/wood tray down to the middle or lower level.  Lay in some extra charcoal because you are now going to be cooking a little further from your barbeque.  If you are just wanting to grill / smoke some steaks, chicken, burgers, sausage for the family, you should leave the charcoal tray at the highest level and use a little less charcoal.  Either way, adding or subtracting  charcoal or wood to your Hybrid Grill is easy with the rear access door.  There's no need to mess with the barbeque or the cooking grate to make fuel adjustments to your grill.  Liquid starter, solid fuel blocks, and electric charcoal starters are some of the methods you can use to start your barbecue. When the coals are ash covered and no longer flaming (about 30-45 minutes), spread them in a single or double layer, keeping them close together to keep them hot. For subtle flavor, consider adding water soaked hardwood chips directly to the charcoal fire, or place some moistened sprigs of herbs directly on the coals or on the grill near the food.   Be sure to follow the first three steps on this page to prevent your barbecue from sticking to the cooking grate.

This method is even better and more flavorful for the same types of foods that you might use with the gas grill option of your Hybrid Grills stainless steel BBQ pit. 


FOR SMOKING (now we're talking real BBQ)

Smoking can be a little more involved than grilling however, once you start, you won't be able to stop.  You'll want to read up on some of the different recipes we have available and take a look at the BBQ woods page before getting started.   When you're ready to start, open the side vents smokestack damper and lid on the firebox of your hybrid grill smoker completely.  You can either remove the cooking grate on the firebox, just use the easy access panel in the side of the firebox grill to lay in approximately 15 lbs of charcoal.  Pile the charcoal in a pyramid and light them.  Leave the top of the firebox open and let the fire burn down to where the coals are thinly covered with grey ash (about 30 minutes).  Shut down the side vents of the firebox to approximately three quarters of the way closed.  Adjust the firebox damper to about one half open and close the smokestack damper to about half way.  Add some water soaked wood chunks of your choosing if that's your style.  Monitor the temperature for about 30 minutes.  The temperature should work its way down to about 250 degrees.  Minor air adjustments to the vents may be required to raise and lower temperature.  Place about 1/3 your smoking wood on the charcoal and follow the three steps at the top of this page to prepare the cooking grate.  You are ready to cook BBQ!  Place barbeque on the opposite end of your smoker from the coals and smoking wood.  Monitor the temperature closely for the first hour and add wood or charcoal as desired to maintain the correct temperature using the easy access door in the rear of your hybrid smoker.  Cooking times and temperatures will vary depending what you are cooking and the specific BBQ recipe you are using.  As a general rule of thumb, keep the temperature between 200 and 250 degrees with 225 degrees being the target.  Again, check your recipe for specifics. You'll need to check the temperature once every hour or so making fuel and airflow adjustments as required. 

 

Barbeque Marinades

Marinades add unique flavors and textures to grilled meat. A marinade is a highly seasoned liquid used to give flavor, and in some cases tenderize tough cuts of beef. Marinades usually consist of liquid such as water, fruit or vegetable juice, or oil, which is combined with seasonings and herbs.


For tenderization, meats need to be marinated for at least 6-8 hours. For flavor, marinate meat for at least 15 minutes or longer. Allow ¼ to ½ cup marinade for each 1 to 2 lbs. of meat. Always marinate in the refrigerator. When basting the meat with a sauce that has tomato, honey or sugar, brush on only during the last phase of grilling to prevent it from burning.
